At the helm of Thai Bird’s culinary journey is Chef David Gilbert. His credentials include a Best Chef nomination by the James Beard Foundation, Rising Star Chef, & most recently Certified Sommelier by the Court of Master Sommeliers.
Gilbert’s Thai Fried Chicken has received high praise, including accolades from Food & Wine magazine and coverage in the Express-News. This dish, known for its gluten free crispy texture and aromatic flavors, reflecting Gilbert’s extensive knowledge of Thai cuisine. His expertise was honed through travels in Thailand and mentorship under M.L. Sirichalerm Svasti, also known as Chef McDang, the Jacques Pepin of Thai gastronomy.
Thai Bird has garnered positive reviews – including being voted Best New Restaurant in San Antonio – for its flavorful, crispy chicken and unforgettable hospitality. Thai Bird is expanding with another location in Alamo Heights, TX. The new location is set to open in the fall of 2024 and will offer indoor seating, spit-roasted chicken, grab-and-go options, and an expanded beverage program including more beer, wine, and nonalcoholic drinks.
