Chef David Gilbert’s path to Thai Bird has always been shaped by curiosity, travel, and a love of bringing people together over food and wine. With more than 20 years spent cooking in Michelin-starred restaurants and five-star hotels around the world, it was his first trip to Thailand in 2009 that truly changed his perspective, inspiring years of travel, time living and learning there, and a deep appreciation for bold flavors and genuine hospitality. Today, as a James Beard–nominated chef and sommelier, David brings those experiences to life at Thai Bird, blending thoughtful cooking, approachable wine, and a community-driven spirit.
